Microprogram, Food Risk Assessment in Support of Regulations (18 credits)

Laval University's "Food Risk Assessment in Support of Regulations" is developed in partnership with several international experts and regulatory organizations, and aims to embed regulatory decisions in a decision-making process based on on risk assessments. This program incorporates international recommendations, including those from the Codex Alimentarius Commission (CAC), and provides training for local experts who can be key players in meeting the food risk assessment needs and contributing to the strengthening of the regulatory capacities of the Codex Alimentarius Commission. from these countries / regions.

The firmware will include the following trainings:

  • Introduction to risk analysis and its involvement in regulatory decisions (3 credits);
  • Chemical Risk Assessment: Food Toxicology (3 credits);
  • Chemical Exposure Study (2 credits);
  • Food consumption studies and exposure assessment models (2 credits).
  • Microbiological Risk Assessment (3 credits);
  • Practical application of microbiological risk assessment (3 credits)
  • Risk Assessment for Food Allergens (2 credits)


Training in Food Fraud management


Introduction :

Food fraud and its reduction in the supply chain are attracting increasing interest from consumers, governments and industries. Certification programs under GFSI now require that a vulnerability assessment and fraud mitigation plan be conducted and documented.

This training is aimed at all agri-food sectors in Quebec and all stakeholders in this sector. It aims to present what food fraud is, its impacts, the regulations attached to it, tools for risk analysis and fraud mitigation, and techniques for detecting fraud in foods. . This training provides the knowledge and tools to put in place the preventive measures requested in the quality systems belonging to the GFSI and thus meet the regulatory requirements in force.

Objectifs :

This one-day training in partnership with the EnvironeX Group includes four sets:

  • Understand what food fraud involves
  • Know local and global regulations related to fraud management
  • Know how to assess the main risks related to food fraud in your supply chain
  • Become familiar with the methods of detecting these frauds

This training day will give you the tools and elements to meet the requirements of the Canadian Food Safety Act and GFSI.


This training is designed to train agri-food industry stakeholders and stakeholders in this sector to better know, understand, and manage food fraud. This training consists of 7 hours of group training with four speakers from INAF and EnvironeX Group. Four themes will be presented in PowerPoint format by four speakers (see program). Participants will be provided with paper materials with the included presentations. Participants will be asked to contribute their opinions and experiences via televoters (thus anonymously) to the plenary sessions that take place after each of the four sessions. An attendance sheet will circulate in the early morning and early afternoon. Participants must have been present during 80% of the training to obtain the training certificate from Laval University.
