Our laboratory considers that there is an unknown in this equation: the threshold between fraud and contamination. Or, in other words, is this pork intentionally or non-intentionally present in these products? The article does not use the word fraud but draws a parallel between this case and that of the various scandals that have affected the meat sector in the past.

To answer this question, the PARERA platform in collaboration with Eurofins Environex and r-Biopharm Inc will develop reference matrices of meats and dairy products that will be prepared under conditions of poor manufacturing practices to mimic cross-contamination between two products species (pork, beef - cow's milk, ewe's milk) and reference matrices which mimic adulteration.

These two types of matrices will be tested by PCR and real-time PCR and the platform will be able to identify thresholds (1%, 5%, 10%) that will support a better interpretation of analysis results for these matrices.
