That's the headline! Will it inform the consumer, or make him doubt, or scare him?
Pork in ravioli Giovanni Rana "100% pure beef", denounces France 5
I quote the Huffington post article which states that "the amount of pork found is not huge, the laboratory speaks of a portion of 1 to 5% and less than 1% for the buffalo. these two meats should make it impossible to affix the claim: "100% pure beef". "
According to the images of the show, the laboratory used the real-time PCR method to determine the presence of other animal species contained in ravioli stuffing.
The company in question "has issued a denial, in which it states" we denounce the statements on our products carried in the framework of the issuance of France 5 and as reported, which do not correspond to reality. " deplores the fact that "despite our multiple requests, we have never received the analyzes that would have been carried out on our products". "
What to think of such results?
Our laboratory considers that there is an unknown in this equation: the threshold between fraud and contamination. Or, in other words, is this pork intentionally or non-intentionally present in these products? Indeed with a presence of 1% or 1 to 5% which, by the way, are not amounts but proportions, can we speak of fraud? The article does not use the word fraud but draws a parallel between this case and that of the various scandals that have affected the meat sector in the past.
To answer this question, the PARERA platform in collaboration with Eurofins Environex and r-Biopharm Inc will develop reference matrices of meats and dairy products that will be prepared under conditions of poor manufacturing practices to mimic cross-contamination between two products species (pork, beef - cow's milk, ewe's milk) and reference matrices which mimic adulteration.
These two types of matrices will be tested by PCR and real-time PCR and the platform will be able to identify thresholds (1%, 5%, 10%) that will support a better interpretation of analysis results for these matrices.
This project will start in Janiver 2020.
